To increase security, it allows only apps from the Microsoft Store and requires Microsoft Edge for safe browsing. To install applications outside of the store app like Zoom, you would need to switch your Windows 10 out of S mode.

You may follow the instruction on the link below under the "How do I switch out of S mode". But just to set a proper expectation, Switching out of S mode is one-way. If you switch out of S mode, you'll need to keep using the standard version of Windows 10 and you can no longer switch it back to S mode. I hope my suggestions help you. For the S mode, you will only be able to install apps on the Store app. However, there is no Zoom application on the Windows 10 Store app. You may opt to use other video conferencing applications or switch out of S mode if you really want to use Zoom.
